What solution (ideally free) would be the best to manually filter incoming messages for a second person's (existing) email account? (Possibly with outlook as the endpoint GUI, but not neccessarily.)

I originally thought about this solution: Lets call original@email.com the original adress. I would take ownership of that account and create a new mail for the second person - filtered@gmail.com. At filtered@gmail.com address, set its default send-as as original@email.com ... and the manual filtering would happen by me, manually resending emails from original@email.com to filtered@gmail.com.

That solution seems a bit cumbersome to me, so are there any suggestions on what solution to use for manual filtering for second person? It could be custom SMTP/POP3 server, or parental controls, does not matter.
